Ingredients
- 2 Tbs avocado oil (or other neutral oil), divided
- 2 hoagie rolls
- 2 Tbs mayonnaise
- 7 oz beef shaved steak
- ¼ white onion, sliced
- ½ red bell pepper, sliced
- 2 oz fresh sliced mushrooms
- 4 slices provolone
Directions
- Open hoagie rolls on a cool griddle. Spread 1 Tbs mayonnaise on the inside of each roll.
- Preheat griddle to 350°F (or use a large skillet).
- Add 1 Tbs oil to the griddle. Toast rolls face down about 3 minutes until nicely browned. Remove.
- Add remaining 1 Tbs oil. Sauté onion, pepper, and mushrooms about 6 minutes until cooked through but not mushy. Move to a bowl.
- Add a thin film of oil if the pan is dry. Add steak; chop and flip until browned and no pink remains, 3–5 minutes.
- Scoot steak into two piles sized for your hoagies. Top each with half the vegetables.
- Shingle 2 slices provolone on each pile. Let cheese melt; turn off heat.
- Slide each pile into a hoagie roll.
