  1. Open hoagie rolls on a cool griddle. Spread 1 Tbs mayonnaise on the inside of each roll.
  2. Preheat griddle to 350°F (or use a large skillet).
  3. Add 1 Tbs oil to the griddle. Toast rolls face down about 3 minutes until nicely browned. Remove.
  4. Add remaining 1 Tbs oil. Sauté onion, pepper, and mushrooms about 6 minutes until cooked through but not mushy. Move to a bowl.
  5. Add a thin film of oil if the pan is dry. Add steak; chop and flip until browned and no pink remains, 3–5 minutes.
  6. Scoot steak into two piles sized for your hoagies. Top each with half the vegetables.
  7. Shingle 2 slices provolone on each pile. Let cheese melt; turn off heat.
  8. Slide each pile into a hoagie roll.
