Air fried ranch chicken breasts on salad

Air Fried Ranch Chicken Breasts

Juicy, crunchy chicken perfect on a salad. A quick chicken breast recipe that feels like fried chicken.
This goes well with asparagus & cucumber salad and creamy Instant Pot mac & cheese.

I use an older model of this air fryer, but this is the newer version I recommend — it cooks faster, crisps better, and has the same reliability I love. You can check it out here.

Time
  • Prep: about 10 minutes

Ingredients

Directions

  1. Salt and pepper the chicken breasts.
  2. Coat with olive oil.
  3. Mix bread crumbs, parmesan, and ranch dip mix.
  4. Toss the chicken breasts in the bread crumb mix.
  5. Air fry at 375°F for 20 minutes, flipping halfway through.
  6. Let rest 5 minutes, then slice for salad.

Notes

  • Pat dry first: Blot the breasts before oiling so the ranch-crumb coating grabs on and crisps instead of sliding off.
  • Even thickness: If a breast is thick on one end, pound it out a bit so it cooks through by the time the coating is golden.
  • Go easy on salt: The ranch packet is already salty, so a light hand with added salt is plenty.
  • Doneness: Pull the chicken at 165°F in the thickest part.
  • Leftovers: Store cooked chicken in the fridge and re-crisp in the air fryer for a few minutes rather than the microwave.

Why This Works

  • Air-fryer convection: Fast-moving hot air dries and crisps the breadcrumb crust all the way around, giving fried-chicken crunch without a pan of oil.
  • Oil as glue: A thin coat of olive oil helps the crumb mixture stick and promotes even browning.
  • Parmesan power: The grated parmesan adds savory umami and browns alongside the crumbs for extra flavor and color.
  • Rest before slicing: Five minutes off the heat lets the juices settle back into the meat so it stays moist on the salad.
