Classic Meatloaf
This is the recipe I grew up on and served to my own family. This tomato-based meatloaf doesn't always slice the best, but is a sure crowd pleaser and loves ketchup.
This goes well with
rustic golden mashed potatoes.

- Bake: 1 to 1½ hours at 350°F (5×9 loaf pan)

Ingredients
- 2 lbs ground beef
- 1 cup rolled oats
- 1 (8 oz) can tomato sauce
- 2 eggs
- 1 package onion soup mix
- 1 tsp salt
- ½ tsp pepper
- ¼ cup ketchup
Directions
- Preheat oven to 350°F.
- In a large bowl, mix hamburger meat and oats.
- In a separate bowl, mix tomato sauce, eggs, soup mix, salt, and pepper. Mix these separately first so the meat won’t get sticky or overworked.
- Mix wet ingredients with the beef and oats until just combined.
- In a 5×9 loaf pan, form the meat mixture into a loaf, pulled slightly away from the sides of the pan.
- Bake for 1 hour to 1½ hours or until internal temperature is 160°F.
- Rest for 10 to 15 minutes.
- Drain grease or remove from the loaf pan before serving.
