John's Mediterranean Air Fryer Chicken Thighs
This chicken recipe fills the house with an amazing aroma of spices. I got this recipe from my friend John. It has been scaled down and modified to work as a weeknight meal.
This goes well with
tabouleh
and
mashed sweet potatoes.
I use an older model of this air fryer, but this is the newer version I recommend — it cooks faster, crisps better, and has the same reliability I love. You can check it out here.

Ingredients
- 4 chicken thighs
Marinade
- 2 green onions
- 2 cloves garlic
- 1 tsp ginger
- 1 tsp salt
- 1 tsp paprika
- 1 tsp cumin
- ½ cup olive oil
- ¼ cup lemon juice
Directions
- Mix marinade in a small bowl and pour into a gallon-sized storage bag with the chicken.
- Place in the refrigerator and let marinate 2 to 6 hours.
- Preheat air fryer to 380°F.
- Place chicken thighs skin side up in the air fryer.
- Cook thighs for 18 to 22 minutes. They should reach an internal temperature of 165°F.
- Cover and let rest 5 to 10 minutes.
Notes
- Marinate longer: Two hours is enough, but closer to six deepens the lemon-and-spice flavor all the way through.
- Skin side up: Arrange the thighs skin side up so the convection air crisps the skin while the fat renders down.
- Check the temp: Pull the thighs at 165°F internal—a thermometer takes the guesswork out of dark meat.
- Rest covered: Tenting the thighs for 5 to 10 minutes keeps them juicy before you serve.
- Single layer: Don’t stack the thighs in the basket; give each room so they cook and crisp evenly.
Why This Works
- Acidic marinade: Lemon juice and olive oil carry the garlic, ginger, and spices into the meat while gently tenderizing it.
- Air-fryer convection: Fast, dry heat renders the thigh fat and crisps the skin without a drop of added oil.
- Dark-meat forgiveness: Thighs stay moist even at 165°F, so the high heat can crisp the outside without drying the inside.
- Rest for juiciness: A short covered rest lets the juices settle back into the meat instead of running onto the plate.
