Ingredients
- 4 Tbsp neutral cooking oil
- 1 lb thinly sliced round steak, chopped and salted
- 1 bell pepper, chopped
- 1 onion, chopped
- 1 (12 oz) bag frozen peas and carrots
- 2 Tbsp butter
- 2 Tbsp flour
- 2 cups broth
- 1 tsp rosemary
- 1 tsp Italian seasoning
- 1 family-sized (8 oz) buttery instant potato packet
- 3½ cups water
- ¼ cup sour cream
- 1 clove garlic
- Green onion
- 1 (8 oz) finely shredded cheddar cheese
Directions
- Start 2 Tbsp of oil in a cast iron pan over medium heat while chopping vegetables.
- Brown meat in cast iron and remove from pan.
- Add 2 more Tbsp oil to pan and add peppers, onion, rosemary and Italian spices.
- Start 3½ cups water in microwave for 5 minutes. Add instant potatoes to bowl.
- Continue to cook vegetables until microwave ends.
- Add to pan the butter, frozen vegetables and meat.
- Pour hot water into mashed potato bowl and stir.
- Stir flour into pan. Stir in broth and let simmer while adding to the mashed potato mixture.
- Stir into mashed potatoes sour cream, green onions and garlic.
- Start broiler on high heat. Stir and simmer meat mixture 5 minutes total. Take off heat.
- Dollop on potatoes to a nice layer. Cover with cheese. Broil 5 minutes.
