Break-Fast Taco Pizza
This is a fun breakfast pizza that comes together quick. It is a cross between Texas breakfast tacos and that fast food style Mexican pizza. This recipe makes two pizzas.

Ingredients
- 1 1/2 Tbs cooking oil
- 4 burrito sized tortillas
- 1 (9 oz) chorizo sausage
- 8 eggs
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 (10 oz) can Rotel (drained and divided)
- 8 oz shredded Colby Jack
- 1/4 cup hot sauce (Valentina works great)
Crema (optional)
- 1/2 cup sour cream
- 1 Tbs lime juice
- 1 tsp dried cilantro
Directions
- Preheat oven to 425°F.
- Brush all four tortillas with oil and prick all over with a fork.
- Place tortillas in the oven on the top rack, two at a time, for 5 minutes.
- Meanwhile, brown chorizo in a large skillet over medium heat.
- In a medium bowl, whisk eggs, salt, pepper, and half of the drained Rotel.
- When chorizo is browned, pour in egg mixture and stir until lightly scrambled (still a little shiny).
- Place two tortillas on cookie sheets or pizza pans as the bottom layer.
- Split egg mixture between the two tortillas. Add about 1/4 of the cheese over each.
- Place another tortilla on top of each. Spread hot sauce across the top tortillas.
- Add remaining cheese, then top with the rest of the Rotel vegetables.
- Bake 10 minutes.
- Optional crema: whisk sour cream, lime juice, and dried cilantro.
- Cut each pizza into fourths and serve with crema.
