Tulsa Style Coney Sauce
Inspired by the classic Coney Islander restaurant in Tulsa — a loose, chili like meat sauce with warm spices, tangy vinegar, and that signature cinnamon note. Perfect for Coney dogs, Frito pie, or spooned over crispy potatoes.
If you want tender, fall-apart results every time, this is the newer slow cooker model I’d choose. It’s the upgraded version of the one I use — grab it here.

Ingredients
- 1 lb hamburger meat
- 1 yellow onion, finely chopped
- 2 tbsp chili powder
- 2 tsp salt
- ½ tsp cinnamon
- ½ tsp cumin
- ½ tsp garlic powder
- 1½ tbsp white vinegar
- ½ tsp black pepper
- 2 tsp beef Better Than Bouillon
- ½ cup water
- 1 (8 oz) can tomato sauce
Directions
- Add all ingredients to a crock pot and stir well to combine.
- Cook on low for 6 hours or high for 4 hours, stirring once or twice if you can.
- The mixture will become a loose, saucy, finely textured meat topping — exactly like Tulsa style coneys.
- Serve over hot dogs with cheddar, or spoon over Fritos for a classic Frito pie.
Notes
- Texture: Tulsa coney sauce isn’t thick like chili — it’s loose, saucy, and meant to soak into the bun or chips.
- Cinnamon: This tiny amount is what gives Tulsa coneys their signature warm flavor. It shouldn’t taste “sweet,” just rounded.
- Bouillon: Better Than Bouillon adds depth without needing long stovetop simmering.
- Tomato sauce: Gives body and color without turning it into a tomato heavy chili.
- Onion: Finely chopped onion melts into the sauce as it cooks, adding sweetness and texture.
Why This Works
- Dump and go simplicity: Everything cooks together, letting the spices bloom slowly over hours.
- Warm spice profile: Chili powder + cinnamon + cumin = the exact nostalgic Tulsa coney flavor.
- Tang for balance: A splash of vinegar keeps the sauce bright and prevents it from tasting heavy.
- Loose texture: The water + tomato sauce combo creates that classic coney consistency that works on hot dogs and Frito pie.
- Crock pot magic: Low, slow heat breaks the meat down into a fine, spoonable sauce — no browning needed.
