- 1 large celery stalk
- 1 bell pepper
- 1 small onion
Canned & seasonings

- 2 (15 oz) cans pork and beans
- 1 tsp salt
- 1 tsp black pepper
- 1 package taco seasoning
- 1 tsp crushed red pepper (optional)
Directions
- Heat oil in Dutch oven and sauté pork until browned (6-8 minutes).
- Add vegetables and sauté 7 more minutes.
- Stir in the rest of the ingredients.
- Bring to boil, turn down to low and simmer 15 minutes.
Notes
- Kid-friendly heat: Leave out the crushed red pepper for the pickiest little eaters, or set it out at the table so everyone can spice their own bowl.
- Swap the protein: Ground beef, turkey, or leftover pulled pork all work in place of the diced pork loin—just brown it the same way.
- Thicker chili: Simmer uncovered a few extra minutes to reduce the liquid; for a thinner pot, add a splash of water.
- Toppings: Shredded cheese, sour cream, or crackers make it feel like a treat without adding much cost.
- Make-ahead: This tastes even better the next day—store leftovers in the fridge up to 4 days or freeze for later.
Why This Works
- Browning the pork: Searing the diced pork loin first builds a savory fond and deep flavor that a quick simmer alone can’t give you.
- Sautéed vegetables: Cooking the carrot, celery, pepper, and onion before the liquids goes in coaxes out their natural sweetness to balance the tomatoes.
- Pork and beans shortcut: The canned beans arrive already seasoned in a light sauce, giving the chili a rich, hearty base with almost no extra work.
- A short simmer: Fifteen minutes on low lets the taco seasoning and tomatoes marry into the pork and vegetables for a cohesive, comforting pot.
