Chicken adobo in the crockpot

Chicken Adobo in the Crockpot

Chicken thighs cooked low and slow in a punchy, garlicky, savory sauce. Served best over rice; this goes well with cucumber salad.

If you want tender, fall-apart results every time, this is the newer slow cooker model I’d choose. It’s the upgraded version of the one I use — grab it here.

Time
  • Prep: about 15 minutes
  • Slow cook: 4–6 hours on low (stir occasionally)
  • Total: about 4½–6 hours (mostly hands-off)

Ingredients

Directions

  1. Peel the skin off the chicken thighs.
  2. Stir the other ingredients in the crockpot.
  3. Add the chicken thighs meat side down.
  4. Cook on low for 4–6 hours, stirring occasionally.

Notes

  • Peel the skin: Removing it lets the sauce soak in and keeps the braise from turning flabby.
  • Meat side down: Place the thighs meat side down so they sit in the sauce.
  • Stir now and then: An occasional stir keeps everything evenly coated.
  • Serve over rice: Cook 4–6 hours on low and spoon it over rice to catch the sauce.
  • Aromatics: Fish out the bay leaves and peppercorns before serving if you like.

Why This Works

  • Vinegar and soy braise: The tangy, salty liquid tenderizes the thighs and builds adobo’s signature flavor.
  • Low and slow: Gentle heat breaks down the connective tissue for fall-apart chicken.
  • Skin off: Removing the skin lets the sauce cling to the meat and keeps the braise from getting greasy.
  • Slow infusion: Garlic, bay, and peppercorns steep into the sauce for savory depth over hours.
