Bueno Muchacos
Pillowy pita shell with savory filling. This is my favorite menu item at Taco Bueno, but we don’t live close to one anymore—time to make it myself. This dough comes together pretty easily and just takes a couple of minutes for each one.

Ingredients
Flatbread
- 4 cups flour
- 1 Tbs + 1 tsp baking powder
- 2 tsp salt
- 1½ cups warm water
- ¼ cup olive oil
Filling
- 1 lb hamburger meat
- 1 packet Old El Paso taco seasoning
- 1 can refried beans
- 1 head iceberg lettuce (chopped or shredded)
- 2 Roma tomatoes (chopped)
- 4 oz cheddar cheese (grated)
Directions
Flatbread
- Mix the dry ingredients.
- Stir in the warm water and oil with a fork.
- Knead until smooth.
- Let rest 30 minutes.
- Divide into 8 balls of dough.
- Roll out each ball to about 8".
- In a dry skillet over medium-low heat, cook each shell 1–2 minutes per side until puffed and golden brown. When bubbles form on the first side, flip and cook until the second side is lightly browned. Adjust heat as needed throughout.
Filling
- Cook the taco meat with the hamburger and seasoning according to the packet directions.
- Warm the refried beans on the stove or in the microwave.
- Place a muchaco shell smooth side up.
- Spread on refried beans, then spoon on taco meat.
- Top with lettuce, tomatoes, and cheese.
