Ingredients
- 1½ lbs boneless skinless chicken thighs
- 4 cups broccoli florets (broken into bite-sized pieces)
- 1 (8 oz) package mini peppers (cut in strips)
- 1 small white onion (cut in small slices)
- 4 Tbs olive oil

- ¼ cup cornstarch
- ½ tsp salt
- 1 tsp ginger
- 1 tsp garlic
Sauce
- ¼ cup soy sauce
- 1 Tbs rice vinegar
- 1 Tbs honey

- 2 tsp garlic (minced)
Directions
- Cut thighs into 1-inch pieces.
- In a small bowl, mix coating ingredients.
- In a medium bowl, toss thigh pieces in 2 Tbs olive oil.
- Stir in coating ingredients—it may look a little gummy, but it’ll be good.
- In a separate bowl, toss vegetables with remaining 2 Tbs olive oil.
- Preheat air fryer to 375°F.
- Cook chicken pieces for 20 minutes, shaking halfway.

- Toss vegetables with chicken.
