Directions

  1. Preheat oven to 400°F.
  2. Brush a 14" pizza pan with olive oil; set aside.
  3. Lay out zucchini slices and salt them. Let sit 10 minutes, then pat dry.
  4. Mix cornstarch with salt, pepper, onion powder, garlic powder, and oregano.
  5. Add ¼ cup of the cornstarch mix to the water to make a slurry.
  6. Toss potato slices in the slurry.
  7. Toss zucchini in the remaining dry cornstarch mix.
  8. Build a layer of potato slices, then zucchini, then repeat.
  9. Add one more layer of potato slices on top of the zucchini.
  10. Press down vegetables in the pan.
  11. Bake for 40 minutes.
  12. While baking, brown sausage and prepare toppings.
  13. When the crust comes out of the oven, the first topping will be the Parmesan—this helps hold it together.
  14. Layer sausage, mozzarella, basil, and tomato.
  15. Bake 20 minutes, rotating halfway through.

  • I start by slicing and salting the zucchini first so I can let it set while I prep the rest.
