Ingredients
- 2 cups Cheez-Its, roughly broken (divided)
- 1 lb rotisserie chicken, chopped
- 1 (20 oz) package frozen hashbrowns
- 1 (10 oz) package frozen peas & carrots
- 1 (10.75 oz) can cream of mushroom soup
- 1 cup sour cream
- 8 oz cheddar, shredded
- 2 Tbsp butter, melted
- 1 tsp salt
- ½ tsp pepper
Directions
- Preheat oven to 350°F.
- In a large bowl, mix rotisserie chicken, hashbrowns, peas & carrots, cream of mushroom soup, sour cream, cheddar, salt, pepper, and half of the roughly broken Cheez-Its.
- Spread the mixture evenly into a 9×13 glass baking dish.
- Combine the melted butter with the remaining Cheez-Its and sprinkle over the top.
- Bake uncovered for 1 hour, until hot and golden.
Notes
- Rotisserie chicken: Already seasoned and tender, which adds depth without extra steps. Pull it into medium shreds so it distributes evenly.
- Frozen hashbrowns: Use shredded, not diced—they hydrate faster and bind better with the sour cream and soup mixture. No need to thaw; they cook perfectly in the hour bake.
- Peas & carrots: Add color and sweetness. Frozen works best because it doesn’t overcook or turn mushy.
- Cream of mushroom + sour cream: This combo creates the “glue” that holds the casserole together. Mushroom soup adds savory depth; sour cream adds richness and prevents the casserole from drying out.
- Cheddar: Sharp or medium cheddar melts into the potatoes and chicken, giving you that classic creamy casserole base.
- Cheez-Its (half inside, half on top): Mixing some inside gives salty, crunchy pops throughout. The top layer becomes a buttery crust.
- Butter + Cheez-Its topping: Melting the butter first ensures the Cheez-Its toast instead of burning. It also helps them adhere to the casserole instead of falling off in flakes.
- 9×13 glass pan: Glass heats evenly and prevents the bottom from over-browning. Metal pans cook faster and can dry the edges.
- One-hour bake, uncovered: Uncovered is key—it lets moisture evaporate so the casserole sets and the topping crisps.
Why This Works
- Perfect moisture balance: The base mixture (sour cream + cream soup + cheddar) creates a stable, creamy matrix. The hashbrowns absorb excess moisture while releasing starch, which thickens the casserole naturally.
- Textural contrast: You get three textures—creamy base, tender chicken, and crunchy Cheez-It topping. That contrast is what makes casseroles addictive.
- Salt + fat + umami: Cheez-Its, cheddar, rotisserie chicken, and mushroom soup all bring umami, which makes the dish taste richer than the ingredient list suggests.
- Balanced flavor: Sour cream adds tang; cheddar adds sharpness; Cheez-Its add salty crunch; peas & carrots add sweetness; chicken adds savory depth. It hits every major flavor note.
- Even cooking: Frozen hashbrowns, frozen veggies, and pre-cooked chicken all reach perfect doneness in the same hour-long bake. Nothing overcooks, nothing stays raw.
- The topping stays crisp: The casserole is baked uncovered; the Cheez-Its are coated in melted butter; and the topping goes on last, not mixed with wet ingredients—so you get a signature crunchy lid instead of sogginess.
