Ingredients
- 1 (12 oz) package bacon (cooked)
- 3 peaches (thinly sliced)
- 1 (5 oz) package arugula
- Hot honey (for drizzling)
Jalapeño mayo
- ½ cup mayonnaise
- 2 Tbs pickled jalapeños
- 2 tsp pickled jalapeño brine
- 2 tsp Dijon mustard
- 8 slices whole wheat or seeded bread
Directions
- Dice jalapeños into small pieces.
- Mix all jalapeño mayo ingredients.
- Assemble each sandwich:
- Spread jalapeño mayo on both slices of bread.
- Add three slices of bacon to each sandwich, breaking them in half.
- Cover bacon with arugula.
- Place peach slices on the arugula and drizzle hot honey over them.
- Place the top slice of bread on top.
Notes
- Crisp bacon: Cook the bacon until it’s properly crisp—it holds up better against the juicy peaches and won’t bend the sandwich.
- Pick firm peaches: Ripe but firm peaches slice cleanly and won’t turn to mush; slice them thin so each bite gets fruit.
- Dial the heat: Adjust the kick with more or less pickled jalapeño, brine, and hot honey to taste.
- Toast the bread: A light toast on the whole wheat or seeded bread keeps it from going soggy under the peaches and mayo.
- Assemble fresh: Build these just before eating so the arugula stays crisp and the bread stays sturdy.
Why This Works
- Sweet-heat-savory: Salty bacon, sweet peaches, and spicy hot honey hit every corner of your palate in one bite.
- Jalapeño mayo: Mayonnaise carries the pickled-jalapeño heat while a splash of its brine and Dijon add tang that cuts the richness.
- Peppery arugula: The greens’ natural bite balances the sweetness of the peaches and hot honey.
- Contrast of textures: Crisp bacon, tender peach, and crunchy toast keep the sandwich from feeling one-note.
