Ingredients

Directions

  1. Add the coleslaw mix to a large salad bowl.
  2. Chop the romaine heart and add it to the bowl.
  3. Slice the mini sweet peppers thinly into rings and add them in.
  4. Quarter the radishes, then thinly slice them; add to the bowl.
  5. Slice the green onion greens and stir them into the salad.
  6. Mix everything together until evenly combined.
  7. Store in an OXO container or a large storage bag with a paper towel to keep it fresh.

Notes

  • Choose sturdy vegetables: Every ingredient in this salad is naturally crisp and low moisture, which keeps the mix fresh for 5–7 days.
  • Use romaine hearts, not outer leaves: The inner leaves stay crunchy longer and don’t wilt as quickly.
  • Slice everything thinly: Thin cuts blend better, stay crisp, and make the salad easier to portion throughout the week.
  • Store with a paper towel: This absorbs condensation and prevents sogginess.
  • Keep dressing separate: Adding dressing only when serving keeps the base fresh and prevents breakdown.
  • Add protein fresh each day: Chicken, tuna, eggs, beans, or cottage cheese turn this into a full meal without shortening the salad’s shelf life.
  • Great for lunches or dinners: Lunch: protein + healthy dressing. Dinner: croutons + cozy dressing.

Why This Works

  • Cabbage + carrots = structural base: Coleslaw mix is the backbone of the salad. Cabbage has strong cell walls and releases very little moisture, so it stays crunchy for days. Carrots add density and stability.
  • Romaine heart adds freshness without wilting: The tight inner leaves hold up longer than spring mix or iceberg. They add volume and crispness without collapsing.
  • Peppers stay crisp all week: Mini sweet peppers have thick, waxy skin that protects them from moisture loss. Even when sliced, they stay crunchy and bright.
  • Radishes bring snap and durability: Radishes are dense and low moisture, so they don’t leak water into the salad. Their peppery bite stays sharp all week.
  • Green onion greens add flavor without sogginess: Using only the greens avoids the moisture-heavy white bulbs. They stay fresh and flexible, adding mild onion flavor that doesn’t break down.
  • The mix is naturally low moisture: None of these vegetables dump water into the bowl. That’s the #1 reason the salad lasts.
  • Proper storage preserves crispness: A sealed container plus a paper towel keeps condensation away and maintains crunch.
  • Dressing added later protects structure: Keeping the base dry prevents wilting and keeps the salad fresh for multiple meals.
